Vegetables in Your Diet
It is universally agreed among nutritionists that it is important to include vegetables in any balanced diet. And of course in a vegetarian diet, vegetables are primary. The vegetables which are or can be included in a regular diet depends in part upon the country or region in which one lives. Diets are necessarily partially dependent upon local availability. In industrialized countries, of course, imported vegetables are available when local vegetables are not in season, and thus a daily diet can always include some variety of vegetables. In earlier times, one awaited the season when certain vegetables were available and could be incorporated in the daily diet. One eagerly anticipated spring and summer when fresh garden vegetables such as tomatoes, onions, lettuce, green beans and other garden-grown vegetables became available. Farmers and those who had kitchen gardens often preserved (canned) vegetables so they could be included in the winter diet. Tssoday there is no reason why people of moderate means cannot incorporate a healthy variety of vegetables in their daily diet. There are many reliable sources for nutritional guidelines to help make decisions about variety and quantity of vegetables to include in a balanced diet. There are general rules, such as including a variety of green and yellow vegetables in the diet, such as green and lima beans, broccoli, spinach and chard, and also yellow vegetables such as carrots, squash and corn. If one includes a variety of no more than the above, your diet will contain most of the nutrients available from vegetables. It is also advisable to include tomatoes, onions, garlic, and peppers as salad components, along with green leafy vegetables, in a healthy diet. Sometimes people find that vegetables served "straight", just steamed or boiled, can become boring. Thus it is important to keep a diet interesting to find different ways of preparing vegetables, including inclusion in tasty soups, stews and casseroles for variety. There are many recipes available to help with suggestions for including vegetables in your daily diet in interesting and inviting ways.
